CHOCOLATE ECLAIR DESSERT RECIPE
Ingredients:
1 16-oz. package graham crackers
2 3-oz. packages vanilla instant pudding mixes
3 1/2 cups milk
9 oz. Cool Whip
2 squares unsweetened baking chocolate
1 teaspoon (plus a little more) vanilla
1 1/2 cup powdered sugar
3 tablespoons light corn syrup
3 tablespoons salted butter
3 tablespoons milk
Directions:
Put butter and baking chocolate in a saucepan. Put the pan on medium-low heat and heat only until the butter and chocolate are melted. Take it off the burner when melted.
Line 9 x 13 pan casserole dish (or similar size) with graham crackers. Prepare pudding mix according to package directions but use only the 3 1/2 cup milk listed. Fold in Cool Whip. Spread 1/2 pudding mixture over crackers. Repeat layers, ending with crackers.
Add the 3 tablespoons of milk and corn syrup to the chocolate mixture and whisk. Add vanilla and powdered sugar and whisk well. Spread over graham crackers. Chill until the chocolate mixture is set, maybe around an hour or so. Enjoy!
