INGREDIENT LIST and RECIPE
4 large eggs (Gail uses extra large eggs)
1 cup sugar
1/2 teaspoon salt
1/2 cup butter, melted
1 1/3 cup light corn syrup
1 1/2 cup pecans (I would not put in any extra than this. Use pieces or halves.)
Mix the first 5 ingredients together. Add pecans and gently stir so as to not break the pecans. Pour into UNBAKED 9" pie shell. Bake at 375 degrees for about 40-50 minutes. If the edges of the pie shell are getting too brown, use either the silicone pie shields (link is above) or aluminum foil to loosely cover. The middle should be just a little jiggly (not a lot, though) when you take it out. All ovens are different. Just keep a close eye on your pie once it gets to about 40 minutes or so.
