Vegetable lentil Soup
Using French Green Lentils, wash one cup and add to a bowl. Pour boiling water over to soak for 20-30 minutes. This will soften and allow them to cook faster.
Heat 2-3 tablespoons of olive oil in Dutch oven or soup pot. Add 2 yellow onions, diced small, 1 large leek, sliced and washed. Season with 1 tablespoon of sea salt and 1 teaspoon of black pepper. Cook until translucent. Add 2 cups each of diced carrots, celery and butternut squash. Add to the pot 1/4 cup of tomato paste. Add 3 diced garlic.
Add 1/2 teaspoon cumin, and turmeric and 1/4 teaspoon ground coriander and cinnamon. Pinch of red pepper flakes. Add drained lentils.
Now add 8 cups of broth,, (vegetable, Mineral broth, beef broth or chicken broth.)
Bring to boil and simmer uncovered for one hour or until everything is tender and soup is thick.
Serve with parmesan cheese grated on top.
