Shrimp Toast makes the most delicious snacks or appetizers and it's so easy to make! My aunty made these for me for the first time many years ago and I've been hooked since!
If you have leftover shrimp spread you can store in the fridge for 2-3 days in an airtight container.

Ingredients:
10 oz raw, peeled, deveined shrimps with tail removed
3 green onions
1/3 cup Kewpie or mayo
1/2 tsp fish sauce
1/2 tsp sugar
1 tbsp minced garlic
1 cup shredded cheese of your choice (I used half mozzarella and half three cheese blend)
pinch of salt and pepper (adjust to taste)
baguette
Instructions:
1. Finely chop your shrimp into little chunks, not a paste.
2. Thinly slice your green onions
3. In a mixing bowl add your chopped shrimps, onions, minced garlic, kewpie, fish sauce, sugar, cheese, salt and pepper. Mix well.
4. Slice your baguette and layer it with your shrimp spread and sprinkle on top some extra cheese.
5. Place the slices directly over the rack and bake for 10-15 minutes at 375 degrees F (time varies by oven and thickness of your baguette slices).
