Ingredients (Serves 4–6)
For Rice
2 cups basmati rice (rinse & soak 30 min)
3½ cups water or light stock
1 bay leaf, 3 cardamoms, 3 cloves, 1 cinnamon stick, salt
For Shrimp Masala
400–500 g cooked shrimp
1 tbsp ghee + 1 tbsp oil
1 medium onion (thinly sliced)
1 tsp ginger
2 tsp garlic paste
3 green chilies (slit)
1 large tomato (chopped)
¼ cup yogurt
¼ tsp turmeric
½ tsp red chili powder (adjust)
1 tsp coriander powder
½ tsp garam masala
Salt as needed
A handful each of mint & cilantro (chopped)
For Garnish & Layering
2 tbsp ghee
Fried onions – ½ cup
Turmeric mixed in 2 tbsp warm milk
Extra mint & cilantro
