Eggs – 8, boiled, peeled, slit
Basmati rice – 2 cups, soaked 30 mins
Onion – 3 large, thinly sliced
Crushed paste – ginger (2-inch), garlic (6–7 cloves), green chilies (3–4)
Tomatoes – 2 medium, chopped
Yogurt – 3/4 cup, whisked
Fresh mint – 2 tbsp
Fresh coriander – 2 tbsp
Ghee – 2 tbsp +1 tbsp oil

Whole spices
Bay leaf – 1
Cloves – 4–5
Cardamom – 3–4
Cinnamon – 1 stick
Star anise – 1

Spice powders
Red chili powder – 1 tsp
Coriander powder – 1 tsp
Turmeric powder – ¼ tsp
Garam masala – 1 tsp (optional)
Biryani masala – 1 tsp
Water: 3½–3 3/4 cups
salt
(Always taste water for salt before cooking – slightly salty is correct.)

You can make the same recipe with 6 eggs instead of 8.
Use 2 large onions instead of 3 and
yogurt 1/2 cup
Keep all the other measurements the same.
