Soft, fluffy, and full of ghee aroma — every grain shines!
This Hotel Style White Veg Pulao is my signature version, made with milk, mint leaves, and a simple semi-dum technique that gives the real restaurant flavour right at home.

Ingredients
Basmati rice 3 cups ( 600 g), soaked 30 min
Water 900 ml (3 ¾ cups)
Milk 6 Tbsp (⅓ cup / 90 ml)
Salt 2¼ tsp (or to taste)
Whole spices
bay leaf 2, cinnamon 2″ piece, cloves 15, green cardamom 4, black cardamom 4,
Green chillies 4–5 slit
Ginger 1 tsp finely chopped
Garlic 2 tsp finely chopped
Mint leaves (½ cup)
Ghee 3 Tbsp
Oil 5 Tbsp
Beans 75 g (½ cup)
Carrot 75 g (½ cup)
Potato 125 g (¾ cup)
Green peas 85 g (½ cup)
Cauliflower 100 g (1 cup florets)
Onion 2 large + 1 medium ( 400 g), thinly sliced
