Ingredients
4 whole tomatoes
1 cup mashed potatoes
1 small onion, chopped
1 tbsp ginger-green chili paste
¼ cup grated coconut
1 tsp salt
1 tsp oil
½ tsp mustard seeds
6 curry leaves (limbda)
oil for frying
batter:
1 cup besan
¼ tsp baking soda
½ tsp salt
½ tsp turmeric powder
1 tsp red chili powder
water as needed
Method of Preparation
Sauté the onion, ginger, chilies paste with mustard seeds and curry leaves.
Add the mashed potatoes, salt, coconut, and stir.
Remove from heat and let cool slightly. Then stir in the coriander leaves.
Make a small incision on the top of the tomato and gently scoop out the insides. Place face down to let any water seep out.
Stuff the filling inside the tomatoes.
Meanwhile, prepare the frying batter by whisking all the ingredients together and adding water until you reach desired consistency.
Dip the tomato into the batter and slide into hot oil and fry until golden brown.
Remove and soak off excess oil on paper towel.
Serve with green chutney.
