Crispy potatoes with Chinese dan dan sauce, now this is the winning combination, crunchy, salty and spicy, an absolute delicious plant-based Asian recipe, I just can't get enough of these yummy potatoes!

Potatoes 400g
Vegetable Oil
Shallots 35g
Garlic cloves 2
Shiitake mushrooms 180g
Doubanjiang 20g
Tahini 10g
Almond butter 20g
Soy sauce 15g
Dark soy sauce 15g
Maple syrup 20g
1. Boiling potatoes: cut the peeled potatoes into large cubes, cook them in salted water for about 15 minutes, or until they can be easily cut through with a knife/fork.
2. Roasting potatoes: Spread the cooked potatoes on a baking tray, drizzle vegetable oil on top, give it a shake before and baking in a 200°C for 30 minutes (or 180°C fan).
3. Preparing other ingredients: remove the stems of mushrooms and cut them into small pieces, finely chop shallots and garlic cloves. In a bowl, mix tahini, almond butter, light soy sauce, dark soy sauce and maple syrup together
4. Making dan dan sauce: sweat the minced shallots with a bit of oil on medium heat, turn to low heat, add bean paste and minced garlic, stir fry for about 5 mins, then add shiitake mushrooms and continue frying, finally add the sauce prepared .
5. Flipping potatoes: After the potatoes have been roasted for 30 minutes, take them out of the oven, flip over so that the unbrowned parts touch the baking tray, return to the oven and bake for 20-25 minutes, or until the potatoes are golden brown.
6. Plating: Place the baked potatoes on kitchen paper to absorb any excess oil, before moving them to a plate, add the dan dan sauce on top, and finally sprinkle chopped green onion, red chillies and sesame to garnish.
