Peanut butter cookies from the Chicago Public schools cafeteria were my favorite growing up family. I loved these cookies so much I searched long and hard to find the recipe.

I found it on a Chicago Tribune website and modified it a little bit to get that taste from my childhood.

Here's the recipe:

Ingredients:

1/2 cup peanut butter(I add 1 tablespoon more)
1/2 cup Crisco solid shortening room temperature
1/2 cup dark brown sugar
1/2 cup granulated sugar
1/2 teaspoon vanilla
1 egg room temperature

1 1/2 cup All purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt

Directions:

Sift flour, baking soda and salt together and set aside

Mix Crisco solid shortening and peanut butter together to combine

Add both sugars and mix for at least 5 minutes

Add vanilla and mix

Add egg and mix

Add the flour mixture in 3 parts and stir gently until combined

Roll cookie dough in palm of hands to form a ball

Place on ungreased cookie sheet

Roll fork in a little flour and press on the cookie to make peanut butter cookie marks

Bake at 375F for 10-12 minutes
