I don't view cornbread as a poor man's food. Instead it is something that is flavorful and can fill you up for very little cost.
If you can make this basic pan of cornbread you can then move forward and start adding things like meat and cheese, corn and jalapenos or whatever you desire. Just make sure the meat is cooked drained and cooled before adding to the batter.
