전란 25g(실온)
녹인 무염버터 15g

-오븐/컨벡션/스메그 150~160도 12~13분

-크림치즈 필링
크림치즈 130g(실온)
슈가파우더 35g

(크럼블 토핑)
차가운 무염버터 25g
설탕 35g
박력분 40g
아몬드 파우더 10g
-오븐/컨벡션/스메그 170도 7~10분

(코팅초콜릿)
다크코팅초콜릿 90g
다크커버춰초콜릿 60g

▶ Ingredients
(Mold size: Chefmade donut pan 32.5 × 25.8 × H 2.3 cm / 7 cm per cavity)

Dough
200 g bread flour
30 g sugar
3 g salt
4 g instant dry yeast
110 g warm milk (for cold weather)
25 g whole egg (room temperature)
15 g melted unsalted butter

Baking:
Oven / Convection / Smeg: 150–160°C (300–320°F), 12–13 min

Cream Cheese Filling
130 g cream cheese (room temperature)
35 g powdered sugar

Crumble Topping
25 g cold unsalted butter
35 g sugar
40 g cake flour
10 g almond powder

Baking:
Oven / Convection / Smeg: 170°C (338°F), 7–10 min

Chocolate Coating
90 g dark compound chocolate
60 g dark couverture chocolate
