Hi this is Luis Rodriguez biggest 3d food pritning fan. This is week #59. In this video I do some initial boring test to see the effect of shell percentage effect on the underskin surface. Interesting results show a clear improvement in quality with lower value, but at the same time a decrease in compression force, directly affecting the mouthfeel of the candy. Really interesting effects about this.
