You don't need a stand mixer, this recipe is done by hand to make it accessible to all even those with physical limitations. A scale that weighs out grams over cup measurements is best as you'll have consistent results every time, but not necessary when first learning if you carefully weigh those ingredients.
Don't be discouraged if your bread isn't like those you see on other videos, I'm going to show you what might happen and common ways to avoid issues. Ugly bread tastes just as great as the pretty loaves.
