Recipe Tips:
Oh wow! That's a lot of sugar! This is a comment that I see every so often. Yes, it is a sweeter bread. But don't worry. Sugar can be reduced or omitted entirely from the recipe and still taste great. It will make the bread more crumbly, the crust will be a more pale color and the bread will dry out faster. You can also reduce the sugar to your liking. I personally use between 1 - 2 tablespoons, around 12.5 - 25 grams of sugar or leave it out altogether. Tinker around and see how much or little you prefer.
The texture of this bread should be very similar to cornbread or muffins. It is a quickbread recipe. The crumb will be very tender and falls apart easier than yeasted breads. Allow the bread to cool completely before slicing for best results.
Do not over-mix the batter. It will lead to a more cake like consistency.
