OSHIRUKO RECIPE:
2 cups anko (red bean paste)
2 to 2 1/2 cups water
1/4 tsp salt
1. In a saucepan, add anko and water and bring to a boil.
2. Once boiling, add salt and mix.
3. Simmer for 10 min or until it reaches the consistency you prefer.
While the soup is simmering, you can begin to make the dango or toast some ready-made mochi.
SHIRATAMA DANGO:
1/3 cup mochiko (glutinous rice flour)
2 1/2 tbsp water
1/2 tsp sugar
1. In a large bowl, combine mochiko with 2 tbsp water and mix until well combined.
2. Form dough into a ball while slowly adding the rest of the 1/2 tbsp of water. (adjust water accordingly)
3. Roll into a smooth ball, then form a log.
4. Pinch off dough and roll into a 2cm size ball. (Makes about 10 balls)
5. Flatten into a thick disc, create an indentation in the center with your finger.
6. Bring a large pot of water to a boil.
7. Add dango and cook for 2 min or until it floats to the surface.
8. Place dango in an ice water bath to cool.
9. Use right away or keep in water and store in the refrigerator. (If storing, need to boil them before serving).
10. Add some pieces of dango to the hot soup and enjoy!
ANKO (Sweet red bean paste) RECIPE:
1 cup (200-210g) Adzuki beans
3/4 to 1 cup granulated sugar
1/4 tsp table salt
1. Rinse adzuki beans.
2. Place beans in a large pot and cover with 1-2 inches of water.
3. Bring to a boil.
4. Cover pot and simmer for 1 to 1 1/2 hours.
5. Once beans are cooked, drain most of the water.
6. Place pot back on the stove and add sugar and salt.
7. Simmer until the mixture thickens.
8. Transfer to a pan or baking sheet to cool completely
