OPRP (Operational Prerequisite Program) and CCP (Critical Control Point) are key concepts in food safety management systems, particularly within frameworks like ISO 22000 and HACCP (Hazard Analysis and Critical Control Points). An OPRP is a control measure or combination of measures applied at critical steps in the production process to prevent or reduce food safety hazards to acceptable levels, but it is not as critical as a CCP. OPRPs ensure the overall operation is maintained under safe conditions and are typically more general preventive controls. A CCP, on the other hand, is a specific point in the process where a significant hazard can be prevented, eliminated, or reduced to acceptable levels, and it requires strict monitoring and control. Failure at a CCP could result in an unacceptable food safety risk, thus it is essential to identify and manage CCPs with precision to ensure the safety of the food product.
