Vegetable sambar | Mango Sambar | Sambar with Health Benefits
Ingredients
Groundnut Oil – 1 tbsp
Garlic pods – 5 (Crushed)
Mustard seeds – ½ tsp
Cumin seeds – ½ tsp
Methi seeds – 1 pinch
Onion – 1 (Cut like petals)
Black Pepper – ½ tsp
Drumstick – 1
Bottle gourd – 1 (small piece)
Brinjal – 1
Tomato – 1
Turmeric powder – ¼ tsp
Rock salt – 1 tsp
Red Chilli powder – 1 tsp
Water – 200 ml
Turdal – 100 gms (Cooked and mashed well)
Tamarind – 1 Amla size
Tamarind Juice – 150 ml
Water – 200 ml
Mango – 1 small
Coriander leaves
Preparations:
1) Add 100 gms turdal and 200 ml water
2) Pressure cook for 2-3 whistles, mash it well
3) Soak tamarind in 150 ml water for 30 mins and squeeze the juice
Procedures:
1) Heat oil in a pan, add garlic pods, mustard seeds, cumin seeds, methi seeds, Black pepper seeds, fry on low flame for 1 min
2) Add onion, fry on low flame for 2 mins
3) Add Drumstick, Bottle gourd, brinjal, tomato, turmeric powder, rock salt, red chilli powder
4) Cover and cook on medium flame for 5 mins
5) Add 200 ml water, Cover and cook on medium flame for 5 mins
6) Add cooked and mashed turdal, tamarind juice, 200 ml water (or as per desired consistency), Mango pieces
7) Cover and cook on medium flame for 8 mins
8) Add some coriander leaves, mix and serve with rice
Note: If you don’t have a measuring cup, regular teacup will be approximately 100 ml (100 gms)
