Tejuino is a traditional meso-American fermented beverage made from nixtamalized corn.
Today it’s popularly consumed in the modern Mexican states of Jalisco, Colima, Nayarit, and Oaxaca.
The ancient Nahua people of pre-Colombian Mexico enjoyed this “drink of the gods” as far back as 4000 years ago.
TEJUINO BASE 🌽
230g piloncillo
230g water
230 grams masa harina
460g water
Pinch salt (4g)
-Ferment for 3 days under cloth at room temp
JAMAICA ICE 🌺
30g dried hibiscus flower (jamaica)
1 liter hot water
50g sugar (5% of the water)
-Allow to steep, freeze into large block for shaving
FROZEN TEJUINO
2 oz POX (Mayan spirit)
3/4 oz rich piloncillo syrup
3/4 oz super lime juice
1 tablespoon Tejuino paste
1 cup ice
blend, top with Jamaica ice ❄️
