Garlic, Basil Chicken
Ingredients for the Basil Garlic Marinade Recipe:
2 lbs chicken breast
5-7 cloves of peeled garlic chopped
1/2 tsp kosher salt with the garlic
10 sprigs of fresh thyme stripped
2 oz fresh basil picked from stem
1 tsp chili flakes
1/3 cup extra virgin olive oil
Fresh lemon and Maldon salt to finish

1. smash up the garlic a little bit a little thyme in
optional chili flakes smash up fresh basil
stream in the olive oil and a gallon Ziploc I pound the chicken

let me explain this to you right here's
a chicken breast we all know what it
looks like this whole end is really
really thick and this little tail end is
like nothing, if you cook a whole chicken
breast when it's the same thickness it cooks
evenly when it cooks evenly that means
every single bite is tender that's why
so kind of want to just start on this
end and keep pounding and when you're doing
this you're focusing on the thick end
not the thin end although you do pound a
a little bit down here. now I'll just drop
those into a bowl to marinate the reason
I don't use the bag is I've had too many
breaks from hammering it and then the
oil leaks out and I'm just not having it
now just get that incredible marinade on
the chicken this smells so good now I'm
really feel like getting in here with
my hands I like it I feel like the
chicken tastes better when you do this
I'm just going to make sure that
marinade's really dispersed it's one of
those marinades when you're making the
the chicken you're like wow just put a
a little piece of plastic over it and then
I'll just cover the top of the age-old
question how long should I marinate my
meat and as time goes on my answer is as
long as you can handle meaning if you
want to make this in one day just try to
get away with an hour or two but I would
really recommend doing it overnight i
like anywhere from 8 to 10 hours for
this marinade so it's even something you
could do in the morning and cook in the
an evening that would be perfect and if you
want to take it 12 24 hours you can but
there is salt in here I don't want it to
dry out too much so just in the fridge
and let those flavors party I'm actually
using a grill pan for this but if you
want to go outside cook it over wood or
charcoal that's also awesome but it's a
little cold where I live right now okay
that pan is smoking hot drop some
chicken in
about two minutes and we'll do a quarter
turn another two minutes and we flip
wow oh two more minutes one final
quarter turn just another two minutes
and we'll rest for about five minutes
alrighty then I got something to say
about slicing this chicken you can just
do the old bum bum bum bum but I'm just
looking at the grains of this meat and
it's running like this and so when we're
slicing meat for peak tenderness in our
mouth we always want to go against the
grain so that's what I'm gonna do
this is absurdly tender I think you can
just see how this knife is just pulling
through man, it feels like I don't know
it feels unbelievably tender now the
the thing to do here is fat and acid a little
bit of fresh lemon juice look at this
just look can you just look at this and
because we only put a little salt in the
marinade the last thing is just a little
a sprinkling of finishing salt and you are done.
