🏴󠁧󠁢󠁳󠁣󠁴󠁿 SCOTTISH MACAROONS 🏴󠁧󠁢󠁳󠁣󠁴󠁿

The classic Scottish macaroon. A fondant centre, dipped in chocolate and covered in toasted coconut. The twist here is that the fondant is made with mashed potato! Don’t let that put you off, there is more than enough icing sugar in there to throw even the finest potato detective off their game!

Makes 21 small macaroons
50g cold mashed potato
400g sifted icing sugar
45g milk chocolate
100g Dark chocolate
115g shredded coconut

I start with a baking potato, blast in the microwave for 5 minutes, then finish the cooking in the air fryer. While warm, cut in half and push through a ricer - a regular masher will also do the job fine. Give it a good beat with a wooden spoon and leave to cool. This will ensure a nice smooth dry mash.

Measure out 50g and drop into a stand mixer fitted with a paddle attachment. Pop in 300g of your sifted icing sugar and start beating slowly, gradually upping the speed. When fully amalgamated add the rest of the icing sugar. Beat till it forms a dry dough that holds together smoothly when pressed between your fingers. You may need more or less icing sugar depending on how wet your potato is.

Tip onto a silicone mat or baking paper and push and roll into a log shape with your hands. Wrap the silicone mat around it and use to roll into a smooth log about the diameter of a scallop.

Cut into discs of about 1 cm thickness. Using a cooking cutter a little bigger than the disc, birl it around to shape into a near perfect circle. Pop into the fridge while you prepare the coconut and chocolate.

Toast the shredded coconut in a dry pan, tossing frequently till uniformly browned. It turns very quickly so don’t leave it. Spread out on a plate to cool. Melt your chocolate, I like to add a bit of milk chocolate to the dark, but do whatever you prefer. Carefully dip each disc into the chocolate, shaking off the excess, then drop into the toasted coconut, make sure it’s well covered and move to a rack to dry.

Parcel them up as gifts or just enjoy with the family, these classic Scottish treats won’t disappoint.
