🏴 HOT CROSS CRUMBLE 🏴
If you are like me and your feed has been full to the brim with Hot Cross Bun recipes, I thought you might appreciate a different take entirely. The hot cross crumble. I was gifted some beautiful home grown rhubarb and some hand picked wild brambles recently, so that combo just said crumble in my mind! My family loves a crumble so an Easter inspired pudding was created. Really it’s just a regular crumble but I have added all the spices that I would normally add to my Hot Cross Bun Recipe - and what a success!
Serves 4-6 People with Custard
Butter a 8 x 10” (20 x 24cm) dish
Filling:
325g rhubarb cut into pieces diagonally
225g Frozen/Fresh Brambles (Blackberries)
80g caster sugar
Juice of half a lemon & an orange
Combine together and place to into the buttered ovenproof dish.
Topping:
80g Rolled Oats
80g Wholemeal flour
80g Soft brown sugar
80g Butter
1tsp Allspice, cinnamon & ground ginger
Half tsp ground cloves, nutmeg, ground cardamom & salt
40g Currants
Zest of a lemon & an orange
Add all dry ingredients to a bowl and mix. Add cubed cold butter and rub into dry mixture till it resembles breadcrumbs. Stir through the currants and the zests, then cover the fruit with the mixture.
Pop into a preheated oven for approx 40 minutes until golden and bubbling round the edges. Serve with a ‘Saltire Cross’ of custard and enjoy.
