Iodine is an essential mineral for our health, and a deficiency can have serious consequences. For this reason, it is extremely important to know about foods rich in iodine. The main risk of iodine deficiency is endemic goiter, a disease characterized by an enlarged thyroid gland.

The human body contains approximately 15 to 23 mg of iodine, with about 75% concentrated in the thyroid gland and the remainder in the gastric, mammary, and kidneys. The thyroid continually replenishes its iodine content through absorption of iodine from the blood and the continuous production of thyroid hormones, T3 and T4. These thyroid hormones, thyroxine and triiodothyronine, accelerate cellular reactions in virtually all tissues and organs of our body, increase our basal metabolism, and increase oxygen consumption and heat production.
The activities of thyroid hormones are critical for normal brain development, neuron proliferation, and the regulation of processes involving brain function. Furthermore, other functions of thyroid hormones include the conversion of carotene into the active form of vitamin A, protein synthesis, and intestinal absorption of carbohydrates. ⠀⠀⠀⠀⠀⠀⠀⠀
As I mention in the video, the iodine concentration in milk and eggs depends on the presence of iodine in the animal's diet. Similarly, the iodine concentration in vegetables depends on the availability of iodine in the soil in which they were grown. In this regard, it's important to note that inland soils tend to be poorer in iodine, and for this reason, endemic goiter is more common and more severe inland. Fish, especially saltwater fish, are excellent sources of iodine, containing up to 10 times more iodine than freshwater fish. In the video, I give examples of which fish have interesting iodine concentrations. But I can already say that cod is my favorite. ⠀⠀⠀⠀⠀⠀⠀⠀
At the end of the video, I talk about foods that interfere with iodine metabolism in our body, called goitrogenic foods. These foods, if consumed in large quantities and excessively frequently, can interfere with the natural metabolism of iodine and lead to goiter.
