GADO-GADO PASTE RECIPE
Gado Gado is a super healthy and delicious Vegetable Salad that originated from Indonesia – the “spice Islands”. Ever better - it only takes 10 minutes to make.
A flavorsome peanut sauce is poured over a mixture of lightly steamed vegetables - creating a wholesome and delicious meal.
This recipe shows how to make the Gado-Gado Paste. Once made the paste can be stored in the fridge for 2-3 months and used when required.
To make the sauce from the Gado-Gado paste is super simple. Use one tablespoon for each person and pour an equal part of boiling water over and mix. Add a good squirt of fresh lime juice and mix.
Once you have tried Gado-Gado – you wont ever forget its tangy and delicious flavour against the crisp texture of the Vegetables.
INGREDIENTS
200 g Roasted Peanuts
5 Big Red Chillis, de-seeded and chopped
7 cloves of Garlic
5 cm Sand Ginger (2cm of normal ginger can be substituted)
A pinch of Himalaya Salt
3 Tbsp Tamarind paste
50 g Palm sugar, sliced
3 Kaffir lime leaves - destemmed
water
vegetable oil
lime juice
METHOD
Place the roasted peanuts into a food processor and blend until smooth. Put aside.
Place into the blender the chilli, garlic, sand ginger, salt, tamarind paste, palm sugar, one kaffir lime leaf and a splash of water. Blend it together until it forms a smooth paste. Heat vegetable oil in a frying pan over a medium heat and add the paste. Simmer for 5 minutes until it slightly thickens and has a nice fragrance.
Remove from the frying pan and let it cool.
Add the paste into the peanuts and mix well to combine together.
Keep the gado gado paste in an airtight plastic container in the fridge. The shelf life is 2-3 months.
GADO-GADO SAUCE
Place one tablespoon of the Gado-Gado Paste into a mixing bowl for each person. Add an equal amount of boiling water and mix well. Add fresh lime juice. Pour over lightly steamed vegetables. Enjoy !
