FRIED TEMPEH (TEMPEH GORENG)
FERMENTED SOY BEAN CAKE
Tempeh is a fantastic source of plant based protein with a unique nutty flavor. It has a higher content of protein, dietary fibre, and vitamins than tofu as it is less processed. Each slice has a crisp nutty flavour infused with a lasting coriander finish.
Tempeh is a soy bean product that originated from Indonesia over 200 years ago. Whole soybeans are fermented into a cake form. The tempeh is usually marinaded in spices and shallow fried. Alternatively it can be used in stir-fry dishes or for vegetarian hamburgers.
Many health food shops and supermarkets supply tempeh these days. You may be lucky and have an Indonesian shop in your city which sells the freshly made version. (Worth the effort!)
This recipe showcases the traditional fried tempeh recipe (tempeh goreng) as you would find on the Island of Java in Indonesia. Each slice has a crisp nutty flavour infused with a lasting coriander finish. A 500g cake of tempeh will serve 4 people with approx. 5-6 slices.

INGREDIENTS:
500 g Tempeh
1 tbsp coriander seeds
2 cloves of garlic
3 cm turmeric
3 kaffir lime leaves
1 tbsp corn-starch
A pinch of Salt
½ cup water
Oil for shallow frying.

METHOD:
Slice the tempeh into thin strips - approx. 5mm thick. Score the face of the tempeh with a knife so the marinade will penetrate more easily.
For the marinade - Add the coriander, garlic, turmeric, lime leaves, salt and corn-starch into a blender. Add ½ a cup of water. Blend until combined. If you don’t have a blender. – use a mortar and pestle for the dry ingredients and add the water at the end.
Add the marinade to a flat bottomed bowl and add the tempeh. Soak for 20—30 minutes turning the tempeh if required.
Heat a frying pan with oil over a medium heat until hot. Fry the tempeh on both sides for approximately 3-4 minutes - until golden brown. Drain on a kitchen towel.

SERVING SUGGESTIONS
Tempeh is often used as an accompaniment for Indonesian dishes such as gado-gado and nasi pecel – but it can be used as a great source of protein in any meal. Place some next to a vegetable stirfry or eat it with your favourite salad.
