Pickled Watermelon:
Equal parts vinegar and water (if you are unsure how much simply fill your jar with the watermelons and then fill 50/50 with water and vinegar. Then decant into your saucepan.)
Salt and sugar, to taste - go heavy
Spices - I used star anise, ginger and cinnamon.
