Smokey sausage, mushrooms, spinach, butternut squash, mixed herbs, sun-dried tomato and red pepper sauce, pasta and parmesan crust bake.
Once again, I've been working with the incredible @zenb_uk this time with its new yellow pea pasta, Pasta Agile. With their unique 2-minute cooking time, you can use the time you save on cooking the pasta towards elevating your favourite pasta dishes and add more creativity and flavour. I chose to make the classic sausage and pasta bake but elevate it to the next level. ZENB Pasta Agile is made from 100% yellow peas, meaning it's gluten free, high in protein, high in fibre and due to its unique new shape, allows the sauce to coat the pasta and maintains its tasty al dente texture.
Ingredients
250g x ZENB Pasta Agile
¼ x butternut squash
8 x sausages
5 x cloves garlic
10 x sundried tomatoes
5 x roasted red peppers
1 x tin chopped tomatoes
250g x parmesan
300g x spinach
2 x large field mushrooms
2 x tbsp olive oil
600ml x chicken stock
10 x sprigs thyme
10 x basil leaves
10 x sage leaves
2 x tsp smoked paprika
3 x slices of bread into breadcrumbs
