This chunky tomato soup is simply wonderfully delicious! I grew up with the canned tomato soup and was not a fan of it. After getting on my own, I had not had tomato soup for about 40 years or so until about a few months ago. Then I had 2 samples of chunky tomato soup from 2 different restaurants and fell in love with this tomato soup! I liked the chunky tomato soup so much that I found a recipe online to try, from roastedroot.net. It was wonderful! I have now made this chunky tomato soup a few times and wanted to share it with y'all. Chunky Tomato Soup Recipe
2-3 tablespoons olive oil
1 1/2 tablespoons butter
1 medium-sized onion, chopped
2 stalks celery, chopped
2 28-ounce cans whole, peeled tomatoes, cut up (diced tomatoes might
work as well; I just have not tried them.)
1 1/2 teaspoons dried basil
1/2 teaspoon pepper
3/4 teaspoon salt
1 teaspoon baking soda
1-3 cups vegetable broth (add how much you want to make a good soup)

Put the olive oil and butter into a large dutch oven pot. Add chopped onion and celery and saute over medium heat until translucent or for about 10 minutes or so. While the onions and celery are cooking, get the whole tomatoes ready. Make sure the peeling is off. (Most cans still have the peeling, even though they say they are peeled.). Chop the tomatoes into medium chunks. As soon as the onions and celery are sauteed, add tomatoes. Add basil, pepper, and salt and stir. Add baking soda and stir. The soup will become a little frothy, and this is normal. Add the vegetable broth. Bring to a boil and then simmer for a few minutes. I usually simmer for about 10-15 minutes. This is delicious with grilled cheese sandwiches! Enjoy!
