Marshmallow Recipe
200g store-bought juice (I used apple juice)
250g sugar
10g agar (strength 900)
Boil the syrup for 6 minutes from the moment it boils.
In a mixer bowl
90g egg whites (3 medium eggs)
90g sugar
A pinch of citric acid
Whisk the egg whites until stiff.
