These are delicious! Don't forget to add cinnamon - I realized I forgot to do this in the first batch. But here's the recipe:
Carrot Cookies from "Living in the Raw" by Rose Lee Calabro
-1 1/2 cup barley, soaked
-4 large carrots, finely grated
-1 medium banana
-1 cup of water
-2 cups of raisins
-1 tsp cinnamon
-1 tsp vanilla
-1/4 t fresh grated nutmeg
-1 C walnuts, soaked 6-8 hours and chopped
1. Place barley, carrots, banana, water, and 1 cup of raisins in a blender; blend until mixture is thick and smooth. Add cinnamon, vanilla, nutmeg, walnuts and the remaining cup of raisins to mixture; mix well.
2. Spoon dough on a dehydrator tray with a teflex sheet, and form into small round cookies. Dehydrate at 105 degrees for 4-6 hours, turn cookies over, and remove teflex sheet. Continue dehydrating for 4-6 hours, or until desired moisture is obtained.
Now, you can follow the recipe exactly, do change things up a bit like I did. I used a regular oven and baked them like I was going to bake regular cookies. They still came out moist and delicious. Add or subtract ingredients to your liking.
