You can still enjoy eating desserts, especially when the ingredients are so fresh and simple. I got this recipe from the book, "Living in the Raw," by Rose Lee Calabro. She's pretty awesome.
This recipe surprised me-once they cool, they have the same texture as cake! You can even toss in some berries to make berry muffins, carrot pulp for a "carrot cake" taste, or apples, pecans, and carob for an apple pie feel. I'm experimenting!
Raw Banana Muffins
From "Living in the Raw" by Rose Lee Calabro
(with my variations)
-3 bananas
-1 cup oats, soaked for a half hour
-1/2 cup walnuts, soaked
2 dates, soaked (or prunes)
-1 - 2 tbsp honey (or more)
-1 tsp pure vanilla (or more)
-1-2 tsp cinnamon
-water
1. Combine bananas, add a little water if needed
2. Add oats, walnuts, and dates, as well as honey, vanilla, and cinnamon. Blend until creamy and has a "cake batter" consistency
3. If you have a dehydrator-awesome! If not, the oven works just fine!
4. Bake for a couple hours at low setting or until golden brown-OR, at 350 degrees for 10-15 minutes.
5. Let cool. Garnish with berries, honey, nuts, and cinnamon.
This is delicious! And honestly, I lost my patience and baked them
at 350 degrees ;)
