Independence Day. Next to Christmas and Thanksgiving, its probably America's most important holiday. On July 4, 1776 representatives of the 13 British colonies decided to separate from Great Britain and call their new land The United States of America. The colonists declared their independence, and the revolutionary war began. The British lost the war, and our new government was eventually formed. America has been going strong-- more or less-- for 247 years.

I look forward to the 4th of July Parade in my hometown of Eagle Point every year because the community I live in takes great pride in itself. The people here are generous, forgiving and kind. Plus, Eagle Point has finally caught the food truck bandwagon. Mobile Kitchen Units, or Mobile Concession Carts or whatever their designation, these food trucks are starting to pop up everywhere now. It's a booming, thriving business model because people nowadays don't like to waste time sitting down in restaurants.

I enjoyed some wonderful street food. Later that night I also saw an impressive fireworks show at the Eagle Point High School Stadium. There was a popular food truck there. too.
