Ingredients:
For the syrup
300 g sugar
150 g juice (I used orange)
15 g agar-agar (900 strength)
Cook the syrup for 6 minutes from the moment it boils on low heat.
For whipping, in the bowl of a mixer
100 g egg white (I used 3 g) Eggs)
100 g sugar
Pinch of salt
Let the finished marshmallows set for 10-12 hours
