Make bread: From Fruit to Finish

Did you know that you could make bread from the fruit you may have sitting around your kitchen?

Check out this video for inspiration and ideas on how to use fruit to make a liquid strong enough to leaven your bread. It's really simple! Just take some fruit like plums, apples, or raisins and put some in a jar. Fill the jar with water and cover tightly with a lid. After about a week the jar will have some bubbles indicating that it's ready to use!

For this loaf, we used the following formula:
500g King Arthur AP flour
375ml yeast water
20g salt
20g suger

That's it. Mix it all together and let the bread rest until ready (it'll grow about 50%). Once it's done, shape it in to a ball and place in to a proofing basket, and let it rest another hour. Meanwhile, preheat your oven to 500F and load your bread cloche, reduce oven temperature to 450.
When the oven is ready go ahead and load the loaf in the oven and bake for 15 minutes with the lid and another 15-20 without the lid.
