Bento Cakes
Makes 3 x 8cm Cakes
Cake
• 115g Unsalted Butter (1/2 cup)
• 200g Sugar (1 cup)
• Vanilla
• 2 Eggs
• 170ml Milk
• 250g All-Purpose Flour (2 cups)
• 6g Baking powder (1 1/2 tsp)

Buttercream
• 250 g Unsalted butter (1 cup)
• 460 g Powdered sugar (4 cups)
• Vanilla extract
• 4 tbsp Heavy cream

Instructions

1. In a bowl, add butter, sugar, and vanilla extract, and beat until creamy (about 5 minutes).

2. Add the eggs one at a time and beat until incorporated.

3. Add flour and baking powder in two parts, alternating with the milk.

4. Pour the batter into a 30 cm x 21 cm baking pan.

5. Bake for 20-25 minutes at 170°C (325°F) or until a toothpick inserted into the center comes out clean. Set aside.

6. To make the buttercream, beat the room-temperature butter for 5 minutes. Add the powdered sugar in two parts and beat for another 5 minutes. Add the vanilla and heavy cream and beat until combined.

7. Divide the cake into 6 circles, each 8 cm in diameter.

8. Place one of the cakes on a plate or cake stand.

9. Spread an even layer of buttercream over the first cake layer.

10. Add a thin layer around the edge of the cake, called a crumb catcher. Repeat the process with a little more buttercream.

11. Decorate the tops of the cakes with more buttercream as desired. …………………………………………………………………………………………
