Spicy Watermelon Rinds
So, I’m in my low-waste era. With watermelons in season, I want to make the most of this tasty and refreshing fruit starting with the rinds.
We are going to salt the rinds and give it a quick pickling. The result? A spicy, sweet, crunchy and bright side dish.
Ingredients
4 cups watermelon rinds, 2-inch cubes
2 tbsp salt
Sauce:
1 tbsp each paprika + cayenne pepper
1 tsp gochugaru
1.5 tbsp white wine vinegar
2 garlic cloves
Handful of cilantro, mint, parsley
1 cup watermelon flesh
1 tsp salt
1. Coat watermelon rinds with 2 tbsp salt. Set aside for 30 min to an hour.
2. Combine the ingredients for the sauce in a food processor.
3. Rinse and dry the watermelon rinds. Cover the rinds with the sauce. Allow it to marinate for at least 30 minutes before serving. Store in the fridge for up to 1 week.
