Making home brew alcoholic Ginger beer in your own kitchen allows you to control the strength of the ginger and the amount of alcohol to be just how you like it yourself. Homebrew, beers of any kind, are always far more satisfying.

Recipe:
700g maris Otter (or other Pale Malt)
100g cornflakes (crunchy nut cornflakes by choice)
150g Ginger root
8g Cascade (Bittering hops)
8g Fuggles (To taste)
Liberty Bell M36 Ale yeast (or of choice)
I only mashed for 30 minutes and then 30 minute boil for Bittering hops +20 minute boil for ginger root.
When I add the flavouring hops I allowed the temperature to drop below 90°C before adding those hopes to get better benefit from the flavouring oils.
Additionally after fermenting I cold crash for a few days before bottling.
2 to 3 weeks of bottling and you're ready to start tasting.
