Ingredients
For the Eggs:
8-12 Large eggs

For the Sweet Mustard Sauce:

2½ Cups white vinegar
1 Cup water
½ Tsp sea salt
2 Tsp yellow mustard
1 Tsp mustard seed
1 Tsp turmeric
½ Cup white sugar
½ Tsp white or black pepper
4-6 Tbsp flour & ½ cup cold water (for thickening)
1 Tbsp pickling spice

Method

Sweet Mustard Sauce:

In a medium pot, combine vinegar, water, sea salt, yellow mustard, mustard seeds, turmeric, pickling spice, sugar, and pepper. Bring to a boil on medium heat, stirring continuously.
In a small bowl, mix 4-6 tbsp flour with ½ cup cold water until smooth. Gradually pour this mixture into the boiling vinegar mix, stirring until it thickens. Cook for an additional 5-10 minutes to blend the flavours.

Boiling Eggs:

Place eggs in a pot of water and boil for 15 minutes until hard-boiled.
Drain, then place eggs in cold water. Peel and set aside in a bowl.

Assembling Pickled Eggs:

Place 3 large mason jars in hot water with lids and caps, and sterilize for 15-20 minutes.
Add the peeled eggs to the jars, then pour the hot mustard sauce over them. Ensure rims are clean before sealing jars finger-tight.

Follow your canning guidelines for sealing the jars. Let them cool to room temperature, then label, date, and store in the fridge for short-term storage.

Bonita’s Tips:
This recipe makes 3-4 jars of pickled eggs. Keep refrigerated for best results.
Use pickling spice, which typically includes: allspice, bay leaves, cardamom, cinnamon, cloves, coriander, ginger, mustard seeds, and peppercorns.
