Ingredients:
4 to 6 fillets boneless codfish 1 medium onion, sliced
2 medium carrot, chucks 1 tsp black pepper
1 tsp sea salt 1 tbsp Worcestershire sauce
¾ cup ketchup ¼ cup white vinegar
2 tbsp brown sugar 1 tbsp oil
1 tbsp butter 1 tsp onion powder
1 cup vegetable broth or water
Grilling time 15 minutes, prep-time 10 minutes, serving for 2 or 4 people.
METHOD:
In a cast iron frying pan or pan of choice, on your outside grill or stove top, start the heat on a low to medium heat. Add butter, oil, sliced onions, chucked carrots, a pinch of sea salt, pepper and onion powder.
Cover with lid or foil wrap or just leave open with grill cover down, cook for 5 minutes let soften.
Season codfish fillets with sea salt, pepper and onion powder keep some for the bbq sauce. Add fillets on top of part cooked veggies.
In a small bowl make BBQ sauce, add Worcestershire sauce, ketchup, white vinegar, brown sugar, sea salt, pepper and onion powder, mix together then add to cast iron pan over codfish and veggies.
Cover again for another 3 to 4 minutes on both sides of fish, if you are not in any rush you can lower the heat and let simmer while you enjoy the outside with a cold drink.
When cooked add to dinner plate and serve with boiled potatoes, or steamed rice, fresh bread or rolls, and a side of salad.
Bonita’s Tips:
Use any type of white fish in season.
The same with onion, you use a onion you enjoy eating.
Make a homemade BBQ sauce or bottled bbq sauce.
