Delicious Vietnamese Beef Pho Noodles Recipe!! 🍜 | Try My Simple Homemade Version 😋

Total cooking time: 6 hours (totally worth it!)

This will make about 16-20 small/medium size bowls. I’m making this big pot for a party. Please feel free to cut the recipe in half 😀

Ingredients/Shopping list:

5-6 lbs of beef bones (leg, shin, or knuckle)
4-5 lbs of oxtail (if you don’t want to use oxtail just replace it with more beef bones)
3 lb brisket (optional, but highly recommended)
4 tbsp coriander seed
4 tbsp fennel seed
½ cup Whole Star Anise
5 Black cardamom
1.5 tsp of whole cloves
2 cinnamon sticks (12 gram)
4-5 medium size onion
1 ginger (4-5 inch piece)
12 tbsp fish sauce (adjust to taste) My favorite brand ➡️ https://amzn.to/48RVLxh
1 tbsp of salt at the beginning + 3 tbsp salt at the end when seasoning (adjust to taste)
3 tbsp rock sugar (adjust to taste) This is the brand I’m using ➡️ https://amzn.to/48wjQK9
2 tbsp of chicken bouillon (optional)
40 cups of water + 16 cup top off

Served with: Pho rice noodles, thinly rare cut beef (I’m using round eye, but use any cut you like), beef meatballs, tripe, lime wedges, cilantro, green onion, bean sprout, thinly slice onions, chili pepper, hoisin sauce and sriracha hot sauce

Please note that adjusting to taste is important as it depends on how much the broth has reduced. If you are cooking a big pot of pho like me, try to use the big burner on your stove.


Cooking Instructions:

Step 1
Add Beef bones and oxtail to a pot with enough water to cover the bones. Then boil on high-heat for 10 minutes. (this will help keep our broth clear)

Step 2
Drain and rinse the beef bones then add it back to a clean pot.

Step 3
Add 40 cups of water + 1 tbsp of Salt. Bring to a boil then reduce to a medium-low heat. (Note once you get it down to a medium low heat it should be a soft rolling boil.)

Step 4
Put the onion and ginger on a baking sheet and broil for 10 mins or until it’s slightly charred. Then add to your broth.

Step 5 (optional, but highly recommend)
Once the water is at a medium-low heat add in a 3 lb brisket to the pot and cook for 2.5 hours

Step 6 (if using brisket)
Remove brisket and put in ice water to stop the cooking process. Then thinly slice and serve with your pho later. Brisket should be tender and you should be able to slice it without it falling apart like pulled pork.

Step 7
Remove Oxtail at the 4 hours mark and save this so that it can be served with your pho later. It will be very tender😀 . (If you cook it for more than 4 hours the meat will begin to break down and fall to the bottom of the pot. Just trying to save you some work so you don’t have to dig for it.)

Step 8
At this point, the water will be reduced by a lot. I added in 16 more cups of water. Also remember to occasionally clean the pot with a fine strainer/ladle and remove the thin layer of fat.

Step 9 (preparing the spices)
Add in your coriander seed, fennel seeds, star anise, cloves, cardamom, and cinnamon sticks to a pan. Roast for 2-3 minutes on a medium-low heat. As soon as you begin to smell the fragrance you can turn off the heat and add all the spices to a spice bag.

Step 10
Add the spice bag to the pot and simmer for 2 hours

Step 11 (total cook time should be 6 hours now⏰)
Add in the beef balls (optional) and season the broth with salt, fish sauce, and rock sugar. You can also add 2 tbsp of chicken bouillon, but it’s totally optional. This will elevate the flavor. (Please adjust all the seasoning to taste or your liking)

Step 12 (cooking the rice noodles)
Just follow the cooking instructions. Each brand’s cooking instruction time will vary. I’m using fresh noodles and only require you to blanch it in hot water for a few seconds.

Step 13
Assemble your bowl with your favorite toppings. This can be served with: Pho rice noodles, thinly rare cut beef(round eye or use any cut you like), beef meatballs, tripe, lime wedges, cilantro, green onion, bean sprout, thinly cut onions, chili pepper, hoisin sauce and sriracha hot sauce 😀
