Peruvian Lomo Saltado is, to me, a fusion food dish. A mixture of South American and Chinese cuisines that works far better than I realised. I'm not exaggerating when I say this was one of the tastiest dishes I have ever cooked. The flavour was wonderful, and the meat was very tender. The addition of chips (fries) reminds me of the Irish spice bag video I made a couple of years ago, and that was part Chinese too #comidaperuana
Ingredients
400g sirloin steak or skirt steak
1 1/2 tbsp vegetable oil in total
1 onion roughly chopped
3-4 spring onions (scallions)
2-3 large chilli peppers
2 medium tomatoes quartered
4 cloves of garlic
1 thumb-sized piece of ginger finely chopped
1 tbsp dark soy sauce
1 tbsp vinegar
A handful of chips (fries)
A handful of cooked rice
Fresh coriander (cilantro) to serve
Salt and pepper to taste
