What do Christians mean when they talk about apologetics?

Apologetics is a name for the reasonable arguments people make in defense of the Christian (and Catholic) faith.

Apologetics sounds like "apology" (as in saying sorry) because they come from the same origin, but the meaning is quite different.

The word Apologetics comes from Greek word "apologia" (ἀπολογία), which means "speaking in defense." In a court of law, a defendant responded to an accusation with an apologia, a defense. It was a formal speech and commonly used outside of court by philosophers like Socrates and Plato as well.

St. Paul even made an apologia in the Book of Acts 26:2.

What is the meaning of apologetics today?

An apologist is someone who defends the Christian or Catholic faith against criticism with arguments based in reason. A Christian apologist speaks in defense of the Church's teaching.

Some of the most controversial topics today call for apologetics to formulate reasonable arguments in defense of certain beliefs.
