Month 4 update.

It's been another month since I last tasted my whisky, so this is a catch up showing what has changed.

An all grain whisky recipe designed to be similar to a clean Speyside whisky. This has been slightly modified by increasing the amount of peat smoke influence a little.

After 1 month, the progress was very promising, easily the best whisky I had made so far. Month 2 was a real disappointment as the oak tannin's took over and swamped the flavour. Month 3 showed some improvement, Here I describe the continuing improvement.

I chose to divide my output into two, aging one as suggested in the recipe above (with slightly change to ABV dilution at each month to give a little extra aging at lower ABV), and the other I added some of the extra distillate that came off after the narrow heart cut to go a little deeper into the tails in search of the smokey flavours. This second batch is diluted to 55% ABV, and will be aged without further dilution for at least a year.
