Hello and welcome to my playlist dedicated to the bases and premixes from Giardino sotto il Naso.
You can really do anything with carob, as I've already shown you in the video on carob powder.
For my alcoholic and non-alcoholic cocktails, I also decided to make a syrup with it, which will have interesting notes of chocolate and dried fruit.
I cleaned the carob pods with pruning shears and split them in half with a paring knife to remove the seeds, which are very hard and could break the blades of your coffee grinder or blender.
I chopped them into small pieces and prepared a decoction, using 70g of carob beans per liter of water. I boiled the water for a few minutes and then added sugar to make a 2:1 syrup.
Before adding the sugar, you can measure the water you boiled with the carob beans with a refractometer to check the sugar content, but it's very low.
I dissolve the sugar thoroughly in the water and let it cool.
Once it's nice and cold, I filter and bottle my syrup.
You can also bottle it hot and vacuum-pack it, as I did with elderflower or bay flower syrup.
