I've been trying to enjoy Mediterranean-style food more recently, and my trip to Egypt in February really helped that. Their take on falafel is different than the more standard chickpea-based one, using fava beans. I fell in love with it.

Falafel:
2 cups (360g) dry fava beans
1 large onion, roughly chopped
4-5 cloves garlic
1 cup Italian parsley
1 cup fresh cilantro
1 cup fresh dill
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp baking soda
1 tsp salt
1/2 tsp black pepper

White sauce:
1/2 cup sour cream
1/2 cup mayo
1 tbsp lemon juice
1 tbsp tahini
1 tbsp olive oil
1 clove garlic
Dill, cilantro, parsley
Salt & pepper
