🔸INGREDIENTS:
Half a small watermelon
1 block feta
A bunch of mint leaves
2tsp olive oil
1tbsp balsamic vinegar
Pinch salt, pepper and lime juice
Half a red onion, sliced
Vinegar, water and salt for picking
🔹PROCEDURE:
Cut the watermelon and feta into bite-sized cubes and add them to the same bowl alongside some freshly cut mint. Make the pickled onions by slicing them and bringing to a boil a mixture of equal parts water and vinegar with a pinch of salt, and pouring over the onions. Leave for 15 minutes until the color changes. For the vinaigrette, vigorously whisk together the oil, balsamic vinegar, salt, pepper and lime juice until thick. Enjoy!
