In this video I show you how to make the easiest ramen that is simple, quick and healthy with a delicious depth of flavour.
Ingredients:
1 Tablespoon of neutral flavoured oil (I used grapeseed)
5 cloves of garlic
1 piece of ginger (3 inches)
1 medium onion
6 cups of vegetable broth
2 tablespoons of soy sauce or tamari
14g of dried shitake mushrooms
1 Tablespoon of white or yellow miso paste
1 teaspoon of sesame oil
230g ramen noodles
Toppings:
Firm tofu fried in teriyaki sauce
Nori sheets
Sesame seeds
Edamame beans
Corn
Enochi mushrooms
Spring onion
Method:
Chop onion, garlic and peeled ginger roughly and fry in oil.
Saute for 5 minutes until onions are translucent.
Add vegetable broth, soy sauce and mushrooms and bring to boil.
Cook for 1 hour on low heat.
Add the miso paste and then strain the broth.
Cook ramen noodles according to instructions and add to the broth.
Serve with toppings.
