Ingredients:
For the cake:
225g (8oz) plain flour
1 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
2 tablespoons cocoa powder
Pinch of salt
50g (2oz) dark chocolate, chopped
125g (4oz) slightly salted butter, softened
175g (6oz) caster sugar
2 eggs, beaten
150ml (1/4 pint) soured cream
For the filling and icing:
375ml (13fl oz) double cream
50g (2oz) icing sugar, sifted
225g (6oz) dark chocolate, melted
Instructions:
1: Preheat the oven to 190C / 375F / gas 5. Grease a deep 23cm (9inch) cake tin and line with baking parchment. Sift together the flour, baking powder, bicarbonate of soda, cocoa powder and salt. Put the chocolate with 2 tablespoons water in a heatproof bowl and melt over a pan of simmering water.
2: Cream together the butter and sugar and beat in the eggs, a little at a time. Fold in a little of the melted chocolate, then some of the floured mixture, followed by a little soured cream. Repeat until all the ingredients are smoothly incorporated. Pour the mixture into the tin and bake for 40 - 50 minutes. Leave to cool for 10 minutes in the tin before turning it out onto a wire rack to cool completely. Split in half horizontally.
3: Whip 150ml (1/4 pint) of the cream until thick and spread over the bottom half of the cake, then sandwich the two halves together. Put the icing sugar and remaining cream in a heatproof bowl and place over a pan of simmering water until the cream is hot. Remove from the heat, add the chocolate and stir until melted. Leave to cool, then spread all over the cake with a palette knife. Chill until ready to serve.
