Broccolini with caramelized onion & mushrooms recipe
Ingredients:
1 bunch broccolini, washed and ends cut off
1/2 cp sauteed mushrooms, I add salt and minced garlic as they cook
1/2 cup caramelized onion • Caramelized Onion - You may love it so muc...
1 T additional healthy fat (ghee, GF butter, avocado oil or evoo)
Himalayan pink salt to taste
Instructions:
~ Bring water to a boil in a 3Qt saucepan (minimum) with a stainless steel steamer basket inserted
~ Add the prepared broccolini, cover and steam for 3-5 minutes. It should be just tender and still bright green.
~ When tender, remove the steamer basket, dumping the broccolini onto a cutting board. Cut into smaller pieces. You can also complete this step prior to steaming.
~ Before the steaming is complete, begin to heat a cast iron skillet to medium. Add additional healthy fat, mushrooms, caramelized onion, and steamed broccolini. Stir well evenly distributing the ingredients.
~ Serve immediately (you can also store any leftovers in the refrigerator and heat up as desired)
~ ENJOY!
NOTE: You can sauté the mushrooms right before putting this dish together. I cook them separately so they are nicely browned and not soggy. I typically use shitakes. If I need both caramelized onions and sauteed mushrooms, I will start with the mushrooms. Once sauteed, I place them in a bowl and use the same skillet to caramelize my onions. No need to wash your skillet in between steps.
