I am doing everything I can to increase those odds. While I have been eating healthy fats, grass-fed meats, mostly organic produce, farm eggs, local honey and organic, small-farm, shade-grown fairtrade coffee for decades... I am now upping my game and sliding into Mediterranean dishes.

I am eating much less because I stay fuller longer. I have more energy, sleep better, and feel healthier.

Mediterranean Black Beans and Rice
INGREDIENTS:
~ 3 cups black beans Or any bean or combination of your choice. Preferable organic. You can use cook your own or use canned, rinsed and drained.
~ 3 cups cooked brown rice - preferably from California, Northern India, or Pakistan
~ 2 T Olive oil
~ 4 cloves fresh garlic, minced
~ 1 tsp Himalayan pink salt or Redmond sea salt
~1/2 tsp ground cumin
~ 1/2 tsp turmeric
~ 1/2 tsp smoked paprika
~ dash of cayenne
~ 3-4 T fresh squeezed lime or lemon juice
~ 3/4 cp of sweet bell pepper, chopped into 3/8" pieces
~ 1 bunch green onion
~ Turkey or chicken chunks or seasoned tofu cubes (optional)
~ Greek whole milk yogurt for garnishing


INSTRUCTIONS:
~ Combine the beans, rice, and seasonings. Add the lemon/lime juice and mix well.
~ Add the chopped peppers.
~ Trim root end from green onions. Slice onion into narrow pieces less than 1/4". Add to mixture.
~ Chop the trimmed parsley (per video)
~ Stir gently to combine. Can be eaten room temperature or warmed in skillet or microwave.
~ Plate and add a dollop of Greek yogurt or other sauce such as Tzatziki or Tahini sauce. Both recipes coming soon.
